What are the herbs/spices that make Chinese foods taste Chinese?

Ginger and garlic are very important in Chinese stir-fries. And the heat of the wok or pan is also very important - the oil should be very hot so as to bring out the flavor of the ingredients, especially the garlic, ginger and onions. I donot use MSG but I put a little sugar instead - this will help a lot, but be careful not to overdo the sugar. Sesame oil is a good addition. Maybe you should also try another brand or type of soy sauce.
